Insulated tumblers have become the default for anyone who wants a drink to stay cold through the afternoon or hot through the morning, and they're very good at that job. But the inside surface — the part your drink is in contact with for hours — is rarely something anyone thinks about when buying one.
What people notice
Two things come up again and again from people who drink from steel every day.
The first is a faint metallic edge, most obvious in coffee, tea and anything with citrus in it. Not overwhelming. Just enough that the drink doesn't taste quite the way it did going in.
The second is carry-over. Steel holds onto flavour. Yesterday's coffee has a way of turning up in today's water, no matter how thoroughly the cup was rinsed.

Where the ceramic lining comes in

Nickel sensitivity
There's one group for whom this matters more than taste. Nickel allergy is among the most common contact sensitivities there is, and most stainless drinkware uses alloys containing nickel.
