Why bare steel changes your drink
Stainless steel is a superb material for drinkware. It's tough, it holds temperature, and it survives daily life. What it isn't is flavourless.
Leave a drink sitting against bare metal for a few hours — particularly something hot, or something with citrus in it — and most people can taste the difference. Steel also holds onto flavour between drinks, which is why water poured into yesterday's coffee cup so often tastes like a compromise.
What the lining does
